What do you know, I was just strolling through the aisle at Fry's
Electronics [*], and this title caught my eye: "WWII Carrier Ops for
Microsoft Flight Sim 2004 and 2002" :

I don't know if you get to dive-bomb the Akagi, but you do take off
from the Enterprise in a Dauntless and drop bombs.
It seems there are other current titles similar to this one. Also,
there are tons of WWII first-person sims, and a few Vietnam War ones
too.
